To your surprise I’ll introduce wines that boldly/badly clash with the food. Wines that absolutely repel the food, so you LEARN not with words but with your senses… WHAT NOT TO HAVE with certain food choices!
Yes, you’ll finish the eve with a full satisfying gustatory exploration but most importantly you’ll take home with you some wine serving tips and tools to utilize when you have your next dinner party.
Traditional Pairing Menu:
Porterhouse Steak with Sauce Diane- Bacon seared porterhouse steak served with a mustard and cream sauce diane.
Coq au Vin- A classic French dish of chicken braised in wine. Stewed with aromatics such as onions, carrots, and mushrooms.
Porchetta & Cranberry Sauce- Boneless slow roasted pork belly seasoned and stuffed with herbs, and crispy skin. Served with a cranberry lemon sauce.
Dessert:
Apple Tarte Tatin- Apples and warm spices in caramel sauce and pate brisee crust.
Vegan Pairing Menu:
Lion’s Mane au Vin- A classic French dish of (lions mane) braised in wine. Stewed with aromatics such as onions, carrots, and mushrooms.
Portobello- Seared mushrooms, finished in brown butter and herbs.
Seared portobello steak au poivre.
Tofurkey- Stuffed tofu with herbs and dressing.
Dessert:
